Perfect pastry, every time. . At last, perfect gluten free pastry that you can use for all your pastry dishes – sweet and savoury.
It’s more than ok if you do it my way. Some other reviewers have said that it’s difficult to work and maybe a bit stodgy. I found this too, but i found a way around it that i’d like to share. I make it up with butter, an egg, and 3 tablespoons water (the packet says four, but it doesn’t mention an egg). This gets whizzed about in the processor until it’s formed itself into a lump. The lump is indeed squishy and i wouldn’t fancy trying to roll it out, not even between sheets of baking paper. At this point i take a tinfoil pie plate and slap the lump in the middle; then mould it so that it’s fairly even and looks ok at the edges. Then i put it in the fridge for at least half an hour; then straight into the oven. Result – perfectly ok base for quiche, bakewell tart, or what you will. I haven’t yet tried making a two-crust pie, but i hope this helps if you’re struggling with a squidgy pastry base.
Acceptable alternative to normal pastry,,. My daughter is gluten inolerant and it’s been a big struggle finding replacements for all the things she liked and got used to before the intolerance was diagnosed. Pastry is of course a fairly important basic ingredient and we’ve found that making your own from gf flour is a hit and miss affair. Thank you mrs crimblejust add water and this mix makes a very acceptable pastry. It is quite tricky to work – if you get it too wet it turns into a sticky mushy mess – but even if you get it just right, it doesn’t hold together like normal pastry: it’s best used in pie tins or dishes and it needs to be formed quite thick. Consequently, the finished pie is rather stodgy and a lot of pastry gets left on the side of the plate. It has an unassuming but somewhat distinctive taste – slightly salty – and texture – slightly gritty. Failings aside, it does the job well enough. Here are the specifications for the Mrs Crimbles Pastry Mix 200 g:

- Makes deliciously gluten-free pastry
I have only one concern about this delivery. The package had been wet and a couple of the outside of the pastry packets were sodden and burst. The pastry was intact but thought it was worth mentioning.
