Reasonable rise in bread machine, high bran, high gluten, good flavour flour. Works well in a bread machine. A very strong (high gluten) wholewheat flour, as advertised. It has a high bran content (seen when sieving the flour), which is in large pieces and makes the texture of the finished loaf decidedly hovis-like, if using no white flour to dilute the wholemeal. The flavour is nutty and brannish, and the rise is adequate with activated yeast (for 20 min. ), and no flour improvers, (but probably very bad if using the dry, quick yeast, throw-it-in the-bottom-of-the-pan technique). The rise could probably be improved with a longer activation of the yeast. The loaf comes out feeling like a bit of a brick, but the texture in the mouth is quite light, and the experience as toast is as expected, nutty and light, holding lots of delicious butter. I got a perfect moderate crust on the five hour bread machine setting. On the down side, and ensuring a four-star review, not five, are the following.
This product arrived in july. Its best before date is: 8/09/16i make the medium loaves, which we eat fairly quickly but would have appreciated at least 3 month on the packet. The white bread has a best before date of november- ordered from other supplier at same time.

I’d been told that canadian flour was good for bread making, but never realised that it was this good. Buy it confidence as it makes a superb ‘wholemeal’ loaf on its own or blended with very strong white. Works brilliantly well in a breadmaker too.
Marriages canadian very strong wholemeal flour. I am diabetic (type 2) & advised not to eat white bread or flour but don’t want to give up bread so now i use the wholemeal flour in my bread-making machine as, apparently, this is ok for me. The first time the loaf was very flat but just adding about 30% more water has solved that problem and my whole meal bread is a joy to look at. And eathave no hesitation in recommending this wonderful & healthy product to every one.
