I discovered spelt flour earlier this year, and it’s now my flour of choice. I’m not willing to give up my bread just yet, and spelt flour is the perfect compromise. This flour has a lovely, creamy colour and makes tasty, crumbly loaves. I have a breadmaker, but i achieve the best results when i make my spelt loaves by hand. Spelt flour has a naturally lower gluten content, so it only needs a short proving time. I can make a loaf in about an hour from scratch. Here’s a tip:if you have a breadmaker, it’s best to mix half of the spelt flour with regular strong bread flour as the dough needs the elasticity of the gluten to produce plump loaves. Without this mix, the spelt dough would rise quickly and then collapse on itself. This pack of spelt flour comes highly recommend.
Bread as good as the bakery. This flour is a god send, and creates fresh bakery tasting loaves but only if used correctlyunfortunately, due to personal reasons, my partner has become intolerant to regular wheat products. As a bread lover, it was thought the only way to have that fix was to go down the shop bought processed route of the famous dry, stale, artificial, lasts longer than the butter you put on it, gluten free rubbish i need to re-mortgage my house to buy. We were told about spelt so thought it was worth a shot, so made some yorkshire puddings and all was fine. So now it was time to give bread making a go. I bought a bread maker, and followed the recipe on the side of the df flour packet. A bread aroma now filling my kitchen, i turned out my 1st loaf.

Wholesome and tasty flour, replaces the usuall strong flour that i previously used in my panasonic breadmaker. I bake it on the fast bake setting and it produces a lovely loaf indeed, highly recommended.
High grade spelt flour, i will be buying again. But then doves farm do have a good reputation for producing quality flours.

Low gluten, great for modern wheat intolerance. . I use this a lot in pastry, and is excellent for those who are wheat intolerant but can cope with this old fashioned wheat with no strange additives or genetically modified shenanigans. If you are using it to bake something like cheese straws you will get a nice really short pastry. If you want to use it for cakes i’d advise doubling the baking powder amount as it is so low in gluten. I’m not sure i’d use this for bread proper but it is excellent for soda bread, especially if you use something like guinness as a raising agent.
I always use spelt flour for cooking as i find i can tolerate it better than wheat. It’s a very versatile flour and i use it for bread making, cakes, pastries, biscuits, etc. I always buy doves farm flour from the local supermarket but it is slightly irritating when they have either run out or only have a couple of packs in stock. A bulk order from amazon was a good way to ensure i got what i wanted and with free postage and packing it was a win/win situation.
