Callebaut Select Dark 54, Good for coating AND eating

Brilliant quality chocolate at a fantastic price. If you do lots of baking and don’t want to have to consistently buy blocks of chocolate from the supermarker at nearly £2 pounds for 100grams for the good stuff. This bag is fantastic, it has a fantastic ‘chocolock’ mechanism which is like a zip lock but clips in place instead. The chocolate are in the bag in little tiny buttons, about half the size of a cadburys button. The benefit, is no more chopping breaking, smushing chocolate. Fantastic product and amazing value for money for a product almost similar in quality to valhona.

Good for coating and eating. This worked very well for coating yummy things, but it is also good enough to eat just straight out of the packet. The pack has a velco-type resealable packet, so you can dip in to it as you want, and then reseal easily. I thought it was good value compared to buying good quality bars or blocks of chocolate, and because the callebaut is in small buttons, it melts easier than the bars. I won’t eat cheap chocolate or cooking chocolate – but this is good enough to compete with a quality brand.

  1. After a few temperings for peppermint creams, truffles and biscuit coatings, i sadly conclude that it’s not so ideal for me. I temper dark choc with absolute ease and success using valrhona at 88 degrees farenheit (31 degrees c) but with callebaut, i’m stumped. It’s terribly finicky in nature. I’ve tried a slightly lower temp but still, my coatings mostly turn out less than presentable, streaky and blooming. I’ve resorted to using it for ganache. The flavour is a little on the candy-ish bittersweet side. If that’s a flavour profile you like. Personally, i find that it’s an acquired taste.
