Adds an extra dimension to home baked bread. I found that using a proportion of spelt flour 25%, wholemeal flour 25%, then 50% white gives a great soft texture to the finished loaf. I use a breadmaker all the time, and have learnt that it is best to turn off the machine at the start of the final resting stage, and leave the lid open to judge yourself when it has proved enough to then bake. This prevents the possibility of over proving, which is the problem with spelt flour. It is not always easy to shop for this product, and this comes at a very good price. I buy all my flours from this company.
This is the best spelt flour that i have used. This is the best spelt flour that i have used. Since becoming intollerent to gluten i hase used spelt or gluten free flour, either of which i can tolerate. I have tried many spelt\ gluten free flours with limited results, and i do mean months and months of using different flours, different recipes all with some problem or other. The best results i have obtained is from using this flour to make cakes and bread. I also use some of the bacheldre organic rye flour because of its low gluten content. I recently purchased a cast iron combo dutch oven to make bread in it and have had made the best bread ever in it, using bacheldre orgaic spelt flour combined with rye flour, seeds, cranberries and raisins. I also make pittza dough with this flour, there is no comparison to the taste of homemade pittza. With regards to cake making, the family favourite all time cake, is banana, chocolate and cardamon cake, a recipe i got from the river cottage fruit book using this spelt flour. This cake comes out exactly like the picture in the recipe book and the taste is amazing.

Excellent for breads and pizzas. I use it in combination with white flour, spelt and rye flours to make a lovely loaf.
