I use this to mix with einkorn flour to make a bread that rises. Einkorn has a marvellous nutty flavour but makes a dense bread on its own.
An interesting flour, smells quite wood-smoky when baking, yet the final taste is more subtle but still has a deliciously different flavour that you can still use for anything you’d normally use wholemeal bread for. I mainly use a bread machine and mix this with a bit of strong white to get an even rise, otherwise it comes out a bit craggy.

This is the third batch i’ve ordered. Have made our bread ( by hand ) for many years and would recommend to anyone who likes bread to have flavour and texture as opposed to some of the mass produced commercial cotton wool variety. I mix it with one third strong white and one third wholemeal both from balchedre. It gives a loaf that can be toasted, that freezes well and gives a reliable result every time.
Excellent flour, makes great bread. . Ideally use this with bacheldre organic yeast. As instructed add 10-20mls extra water. Rises well, good quality flavoursome bread. So tasty a loaf rarely lasts more than a day. I use this in a bread maker on the wholemeal setting. Much better than supermarket bread mix.
Superb flour = superb bread. If you want the supermarket flavour(less) flavour – don’t read this. If you really want a different bread with no added ingredients whatsoever that is soft, light and very tasty then read on. This flour comes in 1 and half kilo bags. I had been looking forward to receiving it and when it came could not resist opening a bag immediately and making a batch. Half a bag and one litre of water with the yeast and sugar in a bowl stirred up into a batter and left for a couple of hours by the aga. The other half sitting with the salt in it – just so i don’t forget the salt – also by the aga. Came back to it and poured the remaining salted flour into the fermenting `sponge’; mixed with a flat wooden spatula and then finished gathering it together with one hand. First surprise – it scarcely stuck to my floured hand at all during this process.

I use it in combination with my sour dough starter and make tasty bread. The packaging let’s it down as the paper bag easily tears. I changed to the smaller bags from the 16kg bag that i normally buy as each time it was delivered there was always damaged packaging and flour seeped into the outer plastic delivery bag. Please don’t continue to spoil an outstanding product with inferior packaging.
