Bacheldre Watermill Organic Stoneground Strong 100% Wholemeal Flour 16 kg : Best chappatiss ever

A nice flour, makes a good loaf in my bread maker. Previously bought doves but find this one better, the loaf is a bit lighter. 16kg sack is a good size for the home bread maker.

I have been using this flour for 6 years when i used to buy it straight from the mill. It is an excellent flour giving a denser more filling loaf. I have never had any problems with it as long as you knead it well between the provings. I have added seeds to the dough also oatmeal and even rosemary and black pepper and have never had any problems with it rising. I have been making bread for 20 odd years and this is the best whole meal flour i have found.

On third batch of this of which the first two were greatthe third arrived with damp in the bag so returned for replacementfor some reason, i don’t know if its been the damp autumn but my loaves are not as good with exact same processmy guess is the flour is not of same quality. Here are the specifications for the Bacheldre Watermill Organic Stoneground Strong 100% Wholemeal Flour 16 kg:

Great tasty bread from this flour. A yet i’ve only made a few loaves with this flour but i’m impressed with the flavour and the texture achieved, the bag is bigger than i’d expected so it’s great value too. Having used this flour for a few years i’m still impressed and i now add a little bit of white strong flour 1/3 when i want a lighter style loaf to toast well.

First time i’ve bought flour in a bag bigger than 1. 5 kg so i hope it will keep. It makes excellent bread in my bread machine; usually mix 200g of this with 100g each of strong white and brown flour for a lighter texture.

We make most of our own bread and at last we have found a flour that makes excellent, tasty loaves. We normally use half and half wholemeal and white. This has proved consistently good.

Very good quality flour that mixes well and produces a lovely dough easily kneaded and rises nicely. Once cooked the bread produced has a lovely taste especially toasted. I found that this flour is better with less water added than would be normally added otherwise it can be a bit heavy.

    Bacheldre mill 100 per cent extraction wholemeal flour retains all the bran and all the wheat germ for maximum taste and nourishment. However, the more bran a flour contains the more water is required for a satisfactory dough because the bran, given time, is more absorbent. If not given sufficient water and time, the bran fragments only wet on the outside, the inside remains dry. ‘slow bread’ is the answer. Ideally, using a kenwood mixer with the paddle attachment, start the dough in the evening by making a ‘batter’ or ‘sponge’. Change to the dough hook then leave overnight in the kenwood bowl. Finish the mix in the morning. Leave to prove for a few hours. Bake to perfection at 220 degrees for 50 minutes. Methodpaddlebatter = 500g water + 3 pinches of fast action yeast (i. Not more than 2g) + 400g wholemeal flour added graduallyleave overnight for the yeast to develop. Hookadd 10g salt to condition the yeast & make the dough more elastic (+10g caraway seed if desired) + 300g wholemeal flour added gradually & mixed thoroughly.
